Oil
The extra virgin olive oil produced by the I Quattro Poderi 1328 agricultural company comes from our olive groves located between 150 and 200 metres above sea level, on the hills of Fiesole, in the Mugnone Valley.
The varieties we use are the typical Tuscan ones: Frantoio, Moraiolo and Leccino.
The olives are harvested manually.
Generally starting from the end of October when they are at their optimum ripening and once harvested they are immediately taken to the mill to be processed.
The oil obtained is filtered to preserve its organoleptic qualities over time.
The main characteristics are a very low acidity, 0.15% expressed as oleic acid, an excellent content of biophenols (510 mg/lt) and a significant amount of tocopherols (250 mg/lt).
It has a herbaceous, fruity scent reminiscent of olives, and the taste immediately reveals a balanced and fruity flavour, with a good spicy finish.
